Chicken Pad Thai

This is the quickest, easiest version of pad thai available. We are sure that this recipe will be a favourite for many.

The key to a perfect pad thai is in the noodles, and learning how to prepare them perfectly based on this recipe. Don't forget the authentic pad thai sauce which is both lightly sour and spicy. When these ingredients are combined, you will get the amazing world famous pad thai.

15 minutes preparation and 12 minutes cooking

 

Ingredients:

  • 200g thinly sliced chicken breast
  • 1 chilli paste
  • 250g Oh! Ricey noodles for Pad Thai
  • 1 scallion
  • 100g soybean sprouts
  • 2 tablespoon sunflower oil
  • 2 tablespoon Pad Thai sauce
  • 1-2 tablespoon thin soy sauce
  • 1-2 tablespoon fish sauce
  • garlic, carrots, cilantro
  • 1 lime
  • 30-50 g roasted peanuts

For the sauce:

  • 2 tablespoon fish sauce
  • 2 tablespoon oyster sauce
  • 2 tablespoon brown sugar
  • 1 tablespoon chilli sauce
  • 3 tablespoon tamarind melted in warm water
  • pinch of ground white pepper

Preparation: 

  • Submerge noodles in warm water and leave them for 15-20 minutes
  • Slice the garlic and scallion and carrots into thin slices
  • To create the pad thai sauce, mix all the ingredients listed above in a bowl and stir them until everything is mixed together
  • Heat up a wok or deep pan, add oil and then chilli paste, leave for 1 minute and then add garlic and half of our scallion, then stir for 1-2 minutes in the wok
  • Afterwards add chicken breast, fish and soya sauce, cook together and then add other vegetables
  • Add the now soaked noodles, and while stirring, cook the noodles with the vegetables to have them absorb the taste
  • Finally add the rest of the scallion, soybean sprouts, cilantro and stir. Pour the pad thai sauce into the wok while still stirring, and continue stirring for 3-5 minutes.
  • The food is ready, shut off the heat and serve onto plates. Add roasted nuts and lime juice here. Chicken breast can be replaced with shrimps or tofu for vegetarians.
