Great sushi starts with great rice. When choosing sushi rice, it is important to consider several factors that will affect the quality and taste of your sushi.

Remember that quality sushi rice is the basis for creating delicious and authentic sushi, so try to choose the best possible choice according to your preferences and availability.

Here are some things you should focus on:

  1. Type of rice:

  • The best choice for sushi is short-grain rice, most commonly known as sushi rice or Japanese rice. This rice has a specific stickiness and taste that is ideal for making sushi.
  1. Degree of stickiness:

  • The sushi rice should be sticky enough to be easily shaped into individual pieces of sushi, but also loose enough so that the grains don't stick together too tightly. Ideal sushi rice produces nice, shapeable and slightly sticky grains.
  1. Quality:

  • Try to choose high-quality sushi rice from proven brands or manufacturers. Quality sushi rice usually has uniform grains, clean taste and aroma.
  1. Origin:

  • Some countries, such as Japan and Thailand, are known for excellent sushi rice. Try to choose rice from these countries if possible.
  1. Packaging:

  • Try to choose sushi rice that is vacuum packed, as this helps preserve its freshness and quality.

Correct preparation of sushi rice is key to creating tasty and high-quality sushi. Here's how to prepare it:

  1. Prepare sushi rice:

  • Pour the dried sushi rice into a bowl and rinse it thoroughly with cold water. Rinse the rice until the water is completely clean.
  1. Cooking rice:

  • Transfer the rinsed rice to a pot and add water at a ratio of 1.1 to 1.2 cups of water to 1 cup of rice.
  • Cover the pot and let the rice stand for 30 minutes to soak well.
  • Then cook the rice on medium heat until the water starts to boil. Then lower the heat and let the rice cook for another 10-15 minutes until the water evaporates and the rice is cooked.
  1. Finish cooking the rice:

  • Once the rice is set, remove the pot from the heat and let it sit covered for about 10 minutes. In this way, the rice will be cooked until soft.
  1. Preparing the vinegar mixture:

  • In a small bowl, mix the rice vinegar, sugar and salt. You can adapt the doses to your taste. Vinegar will give the rice a characteristic taste and consistency.
  1. Mix the rice and vinegar:

  • Transfer the cooked rice to a large mixing bowl.
  • Gradually add the vinegar mixture to the rice and mix gently. Make sure the vinegar is evenly distributed between the grains of rice.
  1. Cooling the rice:

  • After mixing the vinegar with the rice, spread it on the surface of a wide bowl or baking dish.
  • Fan the rice with a fan or fan to cool it down faster.

After successfully completing these steps, your sushi rice will be ready to make different types of sushi such as nigiri, maki or sashimi.
