Hainan rice chickenHainanese Chicken Rice, also known as Hainanese Chicken Rice, is a popular dish in Southeast Asia, especially in Singapore and Malaysia.

This dish consists of chicken cooked in water with ginger and other spices, served with rice cooked in chicken broth. Here is a recipe for Hainanese Chicken on Rice

Ingredients:

  • 1 whole chicken (about 1.5 kg)
  • 2 spoons of salt
  • 2 pieces of ginger (each about 5 cm in size)
  • 4 cloves of garlic
  • 4 handfuls of jasmine rice
  • 1 medium cucumber (for decoration)

For the chicken:

  1. Rinse the chicken under running water and dry with a paper towel.
  2. Put the chicken in the pot and add one piece of ginger (per slice) and 2 cloves of garlic.
  3. Fill the pot with water so that the chicken is completely submerged. Add 1 tablespoon of salt.
  4. You bring the water to a boil and then reduce the temperature so that the water boils slightly (about 75-80°C).
  5. Cook the chicken in gently simmering water for about 40-45 minutes, or until the chicken is cooked through. You can check if the chicken is cooked by pricking its thighs. If clear juice comes out, the chicken is ready.
  6. Once the chicken is cooked, remove it from the pot and immediately plunge it into ice water to stop the cooking. Leave the chicken in the ice water for about 15 minutes.
  7. Then remove the chicken from the ice water, dry it with a paper towel and rub it inside and out with salt. The finished chicken should have smooth skin.

For the rice:

  1. Heat some oil in a pot and fry one piece of ginger (thinly sliced) and 2 cloves of garlic until fragrant.
  2. Add the jasmine rice and stir with the fried ginger and garlic for about 2-3 minutes.
  3. Transfer the rice to the rice cooker and cook it in the chicken broth. Add the remaining tablespoon of salt as well. Cook the rice according to package directions.

Serving:

  • Cut the chicken into pieces and serve on a plate, ideally with pieces of cucumber to garnish.
  • Serve the rice as a side dish to the chicken.
  • You can also make sauces like soy sauce or ginger garlic sauce to go with the dish.
