Recipe: Vegan pumpkin and vegetable tempura

Tempura batter:

  • 1 cup rice flour
  • 1 cup cold sparkling water
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt

Vegetables:

  • 1/2 kabosha, seeded, peeled and cut into 1/2-inch-thick crescents
  • 1 sweet potato, peeled and cut into 1/4 inch thick slices
  • 1 zucchini cut into 1/4 inch thick strips
  • 1 red pepper, stemmed, seeded and cut into strips
  • Frying oil (vegetable, peanut or grapeseed oil)

Dip the food :

  • 1/4 cup soy sauce
  • 2 spoons of rice vinegar
  • 1 teaspoon of grated fresh ginger
  • 1 teaspoon of sesame oil
  • 1 tablespoon maple syrup or agave (optional)

Instructions:

  1. Prepare the dough - Whisk the rice flour, sparkling water, baking soda and salt until combined. Avoid over mixing. Chill the dough while preparing the vegetables.
  2. Prepare the vegetables - Cut the kabocha, sweet potato, courgette and pepper into equal sized pieces to ensure even cooking.
  3. Heat the oil - pour 2-3 cm of it into a pan or pot. Heat to 350°C.
  4. Dip and Fry - Dip the vegetable pieces in the batter until coated, let the excess drip off, then carefully add them to the oil. Fry for 2-3 minutes until lightly browned. Drain on paper towels.
  5. Prepare the sauce - Mix the ingredients for the sauce and mix well.
  6. Serve immediately - Enjoy tempura vegetables hot with dipping sauce on the side. Crispy and delicious!
