Chicken Biryani - Indian Chicken Risotto

Chicken Biryani is one of the favorite dishes in Indian kitchens. This unique dish includes chicken, spices and rice, which are combined with aromatic spices and flavored with herbs. It is a rich, tasty and complex dish that retains its authentic flavor and traditional character. Chicken Biryani is often served with yogurt sauce or tasty harira. It is a great way to discover the diverse taste of Indian food and immerse yourself in the world of exotic spices and aromas.

Portion for: 4 people

Ingredients

  • 25 g of butter
  • 1 large onion, finely chopped
  • 1 bay leaf
  • 3 cardamom pods
  • A small piece of cinnamon
  • 1 teaspoon of turmeric
  • 4 skinless chicken breasts, cut into large pieces
  • 4 tablespoons of balti curry paste
  • 85 g of raisins
  • 850 ml of chicken broth
  • 30 g of coriander, half of which is chopped and the other half is the leaves that are picked
  • 2 tablespoons roasted flaked almonds, for serving

Approach

  • Soak basmati rice (300 g) in warm water and then rinse it thoroughly with cold water until the water is clear.
  • Heat the butter (25g) in a saucepan and cook a large finely chopped onion together with the bay leaf, cardamom pods and a pinch of cinnamon for 10 minutes.
  • Sprinkle turmeric (1 teaspoon) and add chicken breasts (4 pieces, cut into large pieces) and balti curry paste (4 tablespoons). Cook until they acquire aroma.
  • Add the rice to the pot together with the raisins (85 g) and then pour the chicken stock (850 ml).
  • Cover the pot tightly and bring to a boil, then reduce the heat to low and cook the rice for another 5 minutes.
  • Turn off the heat and let it stand for 10 minutes. Mix thoroughly and add chopped coriander (15 g). When serving, sprinkle with the remaining coriander leaves (15 g) and 2 tablespoons of roasted almonds.
