Prepared using delicious baked rice noodles, this recipe will bring you a symphony of flavors. But this is not all! Vegetable Chow Fun in Szechuan is full of charming ingredients that guarantee a unique gastronomic experience.

Ingredients:

  • We need: 250 g of baked rice noodles
  • 2 tablespoons of vegetable oil
  • 3 cloves of garlic, minced
  • 1 red onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 cup of cleaned snow peas
  • 1 cup bean sprouts
  • 2 tablespoons of soy sauce
  • 1 tablespoon of Szechuan pepper , crushed
  • 1 tablespoon chili oil (optional for more heat)
  • Salt and pepper to taste

Instructions:

  1. Cook the baked rice noodles according to the instructions on the package. Drain them and set them aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat.
  3. Add the crushed garlic and saute until fragrant.
  4. Add red onion, red pepper and snow peas to the pan.
  5. Cook for 3-4 minutes until the vegetables are crispy and soft.
  6. Move the vegetables to one side of the pan and add the baked rice noodles.
  7. Cook for 2-3 minutes until heated through.
  8. In a small bowl, whisk together the soy sauce, crushed Szechuan peppercorns and chili oil (if using).
  9. Pour the sauce over the noodles and vegetables and mix evenly.
  10. Stir in the bean sprouts and cook for another 1-2 minutes until they wilt slightly.
  11. Add salt and pepper to taste.
  12. Serve hot and, if necessary, garnish with additional crushed Szechuan peppercorns.
