Fill the wok or wide pan with boiling water until it reaches the level of the bottom, place the food in baskets on a baking sheet or a piece of greasy baking paper and close the lid on it. The time it takes to cook in a steam will depend on the particular food. Make sure there is always enough water in the wok or pan.
