A longer fermentation process results in a darker color and a more pronounced umami flavor with hints of sweetness and saltiness. Red miso is typically used in hearty dishes like stews, stews, and rich sauces for its complexity of flavors.

It is the saltiest of Japanese miso pastes, with bold umami flavours. You can afford to be a lot more sparing with red miso than white miso, but it's always worth tasting as you go.
