HIKARI Miso, or red miso, is made from soybeans, rice and salt, and compared to white miso, it is fermented longer, up to several years. A longer fermentation process results in a darker color and a more pronounced umami flavor with hints of sweetness and saltiness. Red miso is typically used in hearty dishes like stews, stews, and rich sauces for its complexity of flavors.
